so i spent the fourth of july in galesburg, my favorite place to be an American

I showed up at a family friends’ house, we’ll call them the Sherlocks. I’ve known them for at least 12 years and I just adore them. Mama Sherlock was running around trying to get the house cleaned up in time for another family of old friends to stop by… we’ll call them the Butchers… So I pitched in and helped M. Sherlock clean, as well as nagged the Sherlock childrens to help out. Then we went to the store. We stocked up on brats and buns (got the last bag in the store) as well as ingredients for a killer pasta salad, marination chicken tenders, and a hilarious dessert that the youngest Sherlock insisted on making all by himself.

I made a quick marinade of 1 jar apricot preserves, apple cider vinegar, soy sauce and honey and stuck the chicken tenders in it for a few hours. Then Mama Sherlock chopped a bunch of celery, bell peppers, cherry tomatoes, and red onion while a box of rotini cooked on the stove. To that we added a sauce made of 1 cup reduced fat sour cream, 1 cup fat free mayo, salt and pepper, and a generous amount of cayenne pepper. It was awesome, spicy and crunchy and yummy.

Then we had dessert.

I must say it was quite tasty, but the recipe still make me laugh!

Strawberry Whipped Sensation
4 cups fresh strawberries, divided
1 can (14 oz.) EAGLE BRAND® Sweetened Condensed Milk
1/4 cup lemon juice
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
8 OREO Cookies, finely chopped
1 Tbsp. butter, melted

LINE 9×5-inch loaf pan with foil, with ends of foil extending over sides of pan. Mash 2 cups of the strawberries in large bowl. Add condensed milk, juice and 2 cups of the whipped topping; mix well. Pour into prepared pan.
MIX chopped cookies and butter. Spoon over whipped topping mixture. Cover with ends of foil and gently press cookie mixture into whipped topping mixture. Freeze 6 hours or until firm.
INVERT dessert onto serving plate when ready to serve; remove pan and foil. Spread remaining whipped topping onto top and sides of dessert. Slice remaining 2 cups strawberries; arrange over dessert. Store leftovers in freezer.
